Baked Pineapple

"I had this Baked Pineapple at a restaurant a few years ago, and it made me moan, it was so good. It's a baked pineapple, stuffed with coconut, crushed gingersnaps, macadamia nuts, sweetened condensed milk and a bit of rum.
